Breakfasts

My food plan incorporates 1 protein (4 oz), 1 carb, 1 dairy and 1 fruit into each breakfast meal. I do not eat between meals but drink fluids throughout the day. I drink at least 24 oz of water, decaffeinated coffee, herbal tea or sparkling water each day.


Barley Blueberry Pancakes with Peach Topping
Makes 2 servings
1 c barley flakes or oak flakes
1 c egg whites
1 c non-fat plain yogurt or low fat cottage cheese
1 tablespoon coconut or olive oil
4 oz fresh or frozen blueberries


8 oz fresh or frozen peaches, chopped
Mix all but the peaches in a small mixing bowl. Let sit for 15 minutes, stir and drop onto hot skillet sprayed with coconut oil spray. Turn. Microwave peaches for 1 minute in a glass bowl, pour over pancakes and serve.
