Cathy's Wheat-free Baking Mix
Proportions:
3 c Garbonzo/Fava Flour
1 c Potato Starch
1.5 c Tapioca Flour
1 c Brown Rice Flour
1 c Millet Flour
Store in an air-tight container.
Great for muffins, quick breads, pancakes, etc.

I eat one cup of non-fat unflavored yogurt with six ounces of fruit every evening before bed. It keeps my blood sugar even during the night so that when I awake, I am not ravenous.

I maintain 4-5 hours between meals ( or an average of 4 hours). The rationale is to never be really hungry so that cravings and craziness does not creep in and ruin the balance.

This food plan works for me. Not only have I lost 27 lbs in 2 years (a slow and meaningful pace) but I have never felt healthier. This is NOT a diet plan but a sensible food plan that I can maintain for life. I also exercise 2-3 times per week for an hour. I seek mental and emotional balance through my friends, attending self-help meetings and living intentionally.
